Daniel Humm opens HUMM in the West Village on October 10

The chef behind one of the most decorated tasting menus in the world is opening a restaurant where you order what you want. HUMM is à la carte, cooked over wood, and has a martini cart.

Where and when

435 Hudson Street, between Leroy and Morton Streets in the West Village. It opens on Saturday, October 10, 2026, with reservations on Resy.

The menu

Daniel Humm's executive chef here is Dmitri Magi. The dish built to be talked about is a roast chicken for two, from Amish farms in Lancaster, Pennsylvania, with breadcrumbs, butter, lemon, thyme and garlic. Around it: a whole branzino, crispy feta with sesame and shallot agrodolce, tuna crudo, a chicory and tangerine salad, and fried eggplant with pickled green tomatoes.

The martini cart

It rolls to the table during service — the one piece of ceremony in a room that has otherwise set ceremony aside.

The room

Works by Louise Bourgeois, Rashid Johnson and Roni Horn, and a ceiling mural and private dining room by Francesco Clemente.

A chicken for two is a dish that decides the size of the table before anything else does, so book for an even number if it is the reason you are going. The nearest subway is the 1 train, at Houston Street or Christopher Street–Stonewall, both a few minutes' walk from Hudson and Leroy.
